Ingredients
For the Cookie Dough
100g butter, softened
50g white sugar
50g brown sugar
55g egg (about 1 small egg)
5g vanilla essence
210g self-raising flour
2g corn starch
180–200g white chocolate chips
Add-ins & Fillings
Crushed Oreo cookies (mixed into the dough)
White chocolate chips (use half the usual amount for balance)
Oreo pieces (for garnish)
Optional centre: dollops of cookies & cream spread or a small Oreo inside each cookie
Method
Prepare your centre (optional)
Scoop small spoonful’s of your cookies and cream spread and freeze until solid. this helps them stay gooey without leaking when baking.
Cream the butter & sugars
Beat together until the mixture is pale, light, and fluffy.
Add eggs & vanilla:
Mix until fully combined.
Incorporate dry ingredients
Add flour, cornflour, baking powder, baking soda, and salt, mix until just combined.
Add chunks
Fold through crushed Oreo pieces and reduced white chocolate chips evenly.
Stuff the dough:
Portion the dough, place a frozen cookies and cream centre or a whole Oreo in the middle, then carefully seal the dough around it. Roll into a ball.
Top with garnish
Place on a lined tray and press a piece of Oreo gently on top of each cookie ball.
Bake:
Bake at your usual NYC cookie temperature of 180 degrees Celsius for 12 minutes for the classic chewy outside and soft, flavourful centre.
